RICHMOND – Former Mews Tavern co-owner Steve Grandolfi is finally pursuing his dream of owning a “Mom and Pop” restaurant.
Grandolfi recently purchased a pizzeria, located at 410 Kingstown Road, Richmond, which he renamed Pop’s Pizza. The restaurant is named after his father, who is depicted in the restaurant’s logo.
“This size place is always something I wanted to do ever since I got out of Johnson and Wales,” said Grandolfi, who graduated from Johnson and Wales in 1983. “It’s kind of the perfect family restaurant that I’ve always wanted.”
Grandolfi relinquished his ownership of The Mews Tavern in 2007, when he grew tired of the late nights. He then ran a mobile dog grooming business for three years, but missed the restaurant business.
“Restaurant people-it’s in your blood, you can’t get it out,” he said. “And this place kind of fell in my lap and it’s perfect for me, and I’m trying to make this into a real family oriented restaurant.”
Grandolfi opened Pop’s Pizza in March.
He said his business is not only family oriented, but family operated. His nephew and his sister-in-law’s sister work at the restaurant. Grandolfi said sometimes his 4-year-old daughter likes to wait tables too.
“I’ve had a lot of positive feedback on my pizza and it's consistent because I do all the cooking,” Grandolfi said. “Very rarely do I have someone else do the cooking, my nephew works with me, but very rarely do I let anything go out if I’m not here. It’s just the way it’s got to be and this is what I love to do.”
