Fat Belly’s expands to Coventry

The local restaurant chain, Fat Belly’s Pub, is expected to open by the end of this month in Coventry. Open interviews will be held at the 760 Tiogue Avenue location Dec.7 to Dec.9 from 9 a.m. to 3 p.m. Jessica Boisclair. Kent County Daily Times.

COVENTRY — The town of Coventry will become home to a local restaurant chain that is expanding around the state and possibly around the country.

Owner and Certified Executive Chef, Scott Parker said when he studied in Europe in 1994, it became his dream to open an Irish Pub one day.

Now in 2011, he is opening the sixth location in Rhode Island of Fat Belly’s Irish Pub and Grille.

Parker, who received his bachelor’s degree from Johnson & Wales University, started in the restaurant business 26 years ago.

“I started washing dishes to save money for a mo-ped and ended up really liking the industry,” he explained.

After working for a number of different restaurants around the state, Parker went on to teach at Johnson & Wales before opening his own Italian restaurant in Warwick.

He explained that while owning this fine dining restaurant, he had noticed a vacant building located at Goddard Park in Cranston and realized that was the perfect location for an Irish Pub.

And in 2005, Parker opened the first location of Fat Belly’s.

He said that the pub became busy and consistent night after night so he decided to sell the Italian restaurant and a year later he opened the second location of Fat Belly’s in East Greenwich.
